Breakfast Tortilla

If you’re looking to take your breakfast game up a notch, you might want to try the Breakfast Tortilla Fold technique that’s been trending on TikTok. This clever method elevates the humble Tortilla Breakfast Wrap and has become a viral sensation for good reason.

Ingredients:

  • Tortilla
  • Bacon or Sausage
  • 1 scrambled egg per person
  • Half Avocado per person
  • Salsa
  • Cheese of your choice

Preparation:

To assemble the Breakfast Tortilla, start by cooking the bacon until crispy using your preferred method, such as baking, sautéing, or air frying. You can cook the bacon ahead of time and set it aside.

Next, scramble an egg by cracking it into a bowl and beating it lightly with a fork. Season with a pinch of salt and pepper, then cook the egg in a buttered skillet until it’s just set. You can use the same skillet to scramble the egg and sauté the folded tortilla, so there’s no need to rinse the pan.

In a separate bowl, mash half an avocado with a fork and season with salt and pepper for added flavor. If you don’t use fresh avocado often use the pre-packed one.

To assemble the tortilla, cut a slit into the side closest to you, cutting just up to the center. Then, arrange the ingredients into four quadrants on the tortilla: eggs in the top left, bacon on top of the scrambled egg, avocado in the bottom left, and shredded cheese in the bottom right.

Fold the tortilla by starting with the bottom right quadrant and folding it up, then proceeding to fold the other quadrants over each other to form a triangle.

 

Finally, heat a small non-stick skillet over medium heat and melt some butter. Saute the folded tortilla until it’s golden brown and crispy on both sides, adding more butter to sauté the second side if needed.
