Cochinita Pibil

Cochinita Pibil originally from the Yucatan in Mexico. Cochinita means baby pig, and Pibil, means buried or cooked underground. So if you want to make  a true Cochinita Pibil you should be digging a hole in the ground and roast the wrapped pig in banana leaves. Me, I try to do it differently. I did not use a whole pig, I used a pork shoulder. Injected the shoulder with the marinade and cooked it in a crock pot. After the meat was done, broiling the meat in the oven on high gives it a nice crust. I was not able to find the main ingredient for the marinade in the regular store. You probably have to go a Mexican Grocery store to get the achiote seasoning.

Ingredients
  • 1 package (3.5 oz )achiote seasoning
  • 1 cup of Orange Juice
  • ¼ lime Juice
  • 1 tsp Salt
  • 8 lb pork shoulder
  • ½ large white onion
  • 3 cloves crushed garlic
  • Cilantro
  • Corn tortillas
  • Pickled Red Onion
 
Instructions
  1. Place the Achiote seasoning with the OJ, lime juice and the salt in the blender; and mix it all up.
  2. Inject the pork shoulder with the marinade. Place the shoulder in the slow cooker and pour the rest of the marinade in the slow cooker. Top with the onion and garlic. Cook on high for 8 hours.
  3. Take the shoulder out of the slow cooker and broil on high for about 5 min. Just keep an eye on it that you won’t burn it. I like a little crust on mine. Fry the corn tortillas on both side, add the Cochinita Pibil and top with the pickled onion and cilantro.
