Easy Pork Carnitas

Easy Pork Carnitas

This is not the proper way to make Carnita’s.  But hey it’s close enough to it. I had some left over pulled pork and decided to make Carnita’s with it.

Ingredients

  • 1 onion, chopped
  • 2 oranges, juiced and quartered
  • 1 lime, juiced and quartered
  • 1 tsp crushed garlic
  • 1 tbsp cumin
  • 1 tsp chili chipotle powder
  • 1 tsp salt
  • 2 tbsp chicken base
  • 1 – 1½ cups water
  • Shredded Pulled Pork
  • Flour Tortillas or Corn Tortillas
  • Pico de Gallo
 

Instructions
  1. Place all ingredients into a large Dutch oven and simmer for ½ hour until most of the liquid is absorbed. You want to have about ½ cup liquid left in bottom of pan. Preheat oven to broil.
  2. Spread shredded meat, remaining juices and the oranges and lime on a baking sheet and broil for 10 minutes until browned.
  3. I like to brown the flour tortilla on both sides. Add the Pork, salsa and whatever else you like to top on you Carnita.
