Easy Pork Carnitas

This is not the proper way to make Carnita’s. But hey it’s close enough to it. I had some left over pulled pork and decided to make Carnita’s with it.
Ingredients
- 1 onion, chopped
- 2 oranges, juiced and quartered
- 1 lime, juiced and quartered
- 1 tsp crushed garlic
- 1 tbsp cumin
- 1 tsp chili chipotle powder
- 1 tsp salt
- 2 tbsp chicken base
- 1 – 1½ cups water
- Shredded Pulled Pork
- Flour Tortillas or Corn Tortillas
- Pico de Gallo
Instructions
- Place all ingredients into a large Dutch oven and simmer for ½ hour until most of the liquid is absorbed. You want to have about ½ cup liquid left in bottom of pan. Preheat oven to broil.

- Spread shredded meat, remaining juices and the oranges and lime on a baking sheet and broil for 10 minutes until browned.

- I like to brown the flour tortilla on both sides. Add the Pork, salsa and whatever else you like to top on you Carnita.
