Subway’s Italian Ciabatta

Subway’s Italian Ciabatta

Once in a while you order something from a fast food restaurant, and you really like it. And then they stop offering it. Subway had this Italian Ciabatta and I really loved it. This is my copycat version of Subway’s Italian Ciabatta Sandwich. 

Ingredients
  • Ciabatta buns
  • Pesto
  • Fresh Mozzarella
  • Tomato
  • Spinach
  • Genoa Salami or Cotto Salami
  • Banana Peppers
  • Purple Onion
For the Balsamic Vinaigrette
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 large garlic clove minced
  • ¼ balsamic vinegar
  • ¾ cup extra virgin olive oil
 

Instructions
  1. First you need to make the Balsamic Vinaigrette. Add honey, Dijon Mustard, Balsamic Vinegar, pepper, salt, minced garlic and olive oil to the bowl. Mix well, I like to use the hand mixer for that. You can store them in those little glass baby food jars. This give you 1½ jar. You can use this not only on your sandwich you can also use the Balsamic Vinaigrette on your salad.
  2. Cut the bread in half and spread some Pesto on both sides. You can use your home made version or the store bought version. Add on one side the fresh Mozzarella Cheese. Toast the bread.
  3. Then top the bread with the Salami, spinach, tomato, purple onion, Banana Peppers and the Balsamic Vinaigrette.
