Cucumber Tomato Salad

Cucumber Tomato salad so simple to make and so delicious to eat. This should be on anyone’s Cookout Menu.
Ingredients
- 2 large English Cucumbers
- 3 ripe tomatoes of choice
- 3 green onions
- ½ cup water
- ½ cup apple cider vinegar
- 3 tbsp granulated sugar
- 1 tbsp kosher salt
- 2 tsp black pepper
- optional to add ? cup of olive oil
Equipment
Cheese Slicer
Whisk
Bowl
Cutting Board
Instructions
- Peel the cucumbers with a cheese slicer. Cut with a Chef knife one of the products I received from The Kneaded Kitchen to try out. I Love the knife. Be very careful, it’s very sharp. But that’s what you want, you don’t want to work with a dull knife. Cut thick slices of cucumber. Wash the tomatoes and de seed the tomatoes. It doesn’t bother me with seeds. Cut the tomatoes into wedges. Slice the green onions. This recipe is versatile. If you don’t have green onions you may use sweet onion or purple onion. Whichever you have available.
- Whisk together water, vinegar, sugar, salt pepper and optional olive oil till the sugar and salt is dissolved. Pour the dressing over the cucumber slices and tomato wedges. Toss to coat and put in the refrigerator for a couple of hours before serving.
