Chipotle Honey Vinaigrette and Creamy Adobo Ranch Chipotle Sauce
There are two sauces at Chipotle that I really like.The funny thing is you can go in there and never even think about them.You have to ask for the sauce on the side.The Chipotle Honey Vinaigrette has been around for years. It was originally known more as the dressing that came with the salad. Then everybody started dipping their quesadillas and burrito bowls in it and it really took off.In 2023 Chipotle even added the Honey Vinaigrette as one of the sides you could choose when ordering a quesadilla online.And I understand why.It is sweet, tangy, smoky and has a little kick to it.Then in June 2025 Chipotle came out with Adobo Ranch. It was their first new dip in five years.Now that one got my attention too. It is completely different from the vinaigrette. The vinaigrette is sweet and tangy. The Adobo Ranch is creamy, smoky and has that little chipotle kick.So naturally I had to make both of them at home.And since they go with the same burrito bowls, tacos and salads I decided there was no reason to make two separate posts.Here are my homemade versions.

Materials
Ingredients for Chipotle Honey Vinaigrette
1/2cupred wine vinegar
3tbsphoney
12 chipotle peppers in adobo
1tbspadobo sauce
1tspdried oregano
1/2tspcumin
1tspsalt
1/4tspblack pepper
1/2cupneutral oil — avocadograpeseed, or vegetable oil
1/2cupsour cream
Ingredients for Creamy Adobo Ranch Chipotle Sauce
1/4cupmayonnaise
1chipotle pepper in adobo
1tsp2 adobo sauce
1tbsplime juice
1small garlic clove
1/2tspdried dill
1/2tsponion powder
1/4tspgarlic powder
1Pinchof salt
A splash of milk or buttermilk to thin it
Instructions
For Chipotle Honey Vinaigrette
Blend everything except the oil first.
Then slowly blend in the oil until it gets slightly thick and emulsified.
Taste it.
If you want that stronger Chipotle sweet-tangy kick add a little more honey or adobo.
For Creamy Adobo Ranch Chipotle Sauce
Blend everything until smooth.
Add a splash of milk or buttermilk if you want it a little thinner.
Put it in the refrigerator for at least 30 minutes.
It tastes better after everything has had a chance to sit together.
Notes
Two different Chipotle sauces and both are easy enough to make at home.
Use them on a burrito bowl, tacos, salad or just keep them on the side for dipping.
And you don’t have to remember to ask for an extra cup
