Green Seasoning

There are variations on the herbs/ingredients used in green seasoning throughout the Caribbean. Now you are asking yourself with what dish can I use this marinade ? It’s perfect for marinading fish, poultry, meat and vegetables. Also a great addition to soups, stews, curries and slow cooking casseroles.

Ingredients
  • 1 onion
  • 1 head of garlic
  • 2 ” of ginger
  • peppers sweet or hot it’s up to you
  • 4 green onions
  • 4 thyme
  • handful of basil
  • handful cilantro
  • handful parsley
  • 1 tbsp salt
  • 3 tbsp oil
  • 1 juice of lemon
 
Instructions
  1. Wash your vegetables and chop in pieces. Add all to the blender. Then add salt, lemon juice and the olive oil. Store in a glass jar in the refrigerator. If you don’t use it often freeze it in small badges.
