Banana, Cranberry, Walnut Bread

  • 1 cup sugar
  • 5 tbsp unsalted butter softened
  • 1 cup mashed ripe banana ( 2 med)
  • ¼ cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup chopped walnuts
  • 1 ½ cups coarsely chopped fresh cranberries or OceanSpray Cranberries
  1. Preheat the oven to 350°F. Set oven rack to center position.
  2. Grease a loaf pan. For easy bread removal.
  3. Mix sugar and butter in a medium mixing bowl until completely blended.
  4. Add banana, milk and eggs, and vanilla mix well.
  5. Add the dry ingredients, mixing just until moist. Stir in nuts and cranberries.
  6. Spread batter evenly in the loaf pan.
  7. Bake for 1 hour and 10 minutes, or until a toothpick inserted in the center of the bread comes out clean. Remove from pan, cool on rack.
