The Real Advocaat

Advocaat is a traditional Dutch liqueur made from barn eggs, sugar, brandy and vanilla. One day I will make it the original way right now I make it the easy way.
  • 10 egg yolks
  • 1⅓ cup sugar
  • 1½ cup brandy or cognac
  • pinch of salt
  • 1 vanilla bean or 2 tbsp vanilla extract
  1. I had bought a vanilla bean some time ago and this vanilla bean was no longer soft, so I cut it in pieces and added the vanilla bean to my home made vanilla extract. If you do have a soft vanilla bean, split it in half and scrape the seeds out,and add to the egg yolks. If you are not handy to separate the egg yolk from the egg white use a slotted spoon.
  2. Put a pot with water on the stove and let the water come to a boil. Add the sugar and the vanilla seeds or vanilla extract to the egg yolks and beat till it becomes thick. It took me about 5 minutes. Then add the brandy to the egg yolk mixture.
  3. Put the bowl with the egg yolk mixture on top of the pot with the boiling water. Lower to simmer. Stir the egg yolk mixture. Initially it will be thin. Keep stirring. Do NOT let this egg mixture come to a boil, otherwise it may separate and the alcohol will be evaporated. See picture below it should be thick enough to cover the back of the spoon. Let it cool and put in a storage jar. Serve with some whipped cream. Save in the refrigerator. With the leftover egg white you can make some schuimpjes.
