Mac & Cheese

Macaroni & Cheese, that is some real comfort food. With this recipe you can change the kind of cheese you want to use. Just keep the same proportions.

Ingredients

  • 2 cups macaroni noodles
  • 3 tbsp butter
  • 2 tbsp flour
  • 1/4 tsp ground red pepper
  • 1/2 tsp mustard powder
  • 2 cups milk
  • 1 cup of cheese of your choice ( I used Mexican mix, you can use cheddar if you like)
  • 1 cup Velveeta cheese
  • 1/2 cup of cheese of your choice for the topping
  • 1 tbsp sour cream

Instructions

  1. Bring a saucepan of lightly salted water to a boil. Add macaroni, and cook 6 minutes. Drain.
  2. In a separate saucepan, melt the butter over medium heat. Take the pot off the stove and add the flour, red pepper and mustard powder, stir until smooth.
  3. Slowly stir in the milk, beating out any lumps. Put it back on the stove and add the cheese and the Velveeta cheese and the sour cream, stir constantly until the sauce is thick and smooth.
  4. Butter the casserole dish then add the drained noodles. Pour the cheese sauce over the noodles and mix it up. Sprinkle with the 1/2 cup of cheese of your choice.
  5. Turn the oven on 350F. Cover the casserole dish with some foil and cook for 10 minutes. Take off the foil and cook for an additional 3 minutes under the broiler.

Olive Garden's Chicken Alfredo

A great copycat recipe of Olive Gardens Chicken Alfredo Fettuccine Noodles. It’s one of the easiest copy cat recipes.

Ingredients

For the chicken breast:

1 tbsp Poultry seasoning
1 tbsp Cajun Seasoning
3 chicken breast
1/2 stick butter
For the Fettuccine Alfredo:
Cooked Fettuccine noodles
2 tbsp butter
1 tbsp crushed garlic
2 cups half and half
1 cup Parmesan cheese
1/8 tsp white pepper
1 tbsp cornstarch diluted with 1 tsp water
1/2 cup chopped parsley
1 tsp salt

Instructions

Boil plenty of water in a large pot and add 1 tsp of salt. Cut the chicken breast in half and season with the poultry seasoning and Cajun Seasoning.

Heat the skillet over medium high heat. Add the 2 tbsp butter and wait till it is slightly brown. Add the chicken breast and brown on both sides. It shouldn’t take but 5 minutes. Take them out of the skillet and let the chicken breast rest.

While you are cooking the chicken breast the water should be boiling by now. Add the fettuncine noodles to the water and boil for 12 min. Drain the noodles in the strainer.

Making the Alfredo sauce is easy. Put 2 tbsp butter in the pot add the crushed garlic. Then add the 2 cups half and half, 1 cup Parmesan cheese, 2 tbsp cream cheese and the white pepper. To make the sauce thicker add the diluted cornstarch mix.

First put the Fettuccine noodles on your plate top it with the Alfredo sauce, then add the chicken breast cut in strips top it off with the chopped parsley

Bahmi Goreng

Bahmi Goreng is the noodle equivalent of nasi goreng, or Indonesian fried rice. Like fried rice, it can accommodate whatever leftovers you have in the cupboard. So use this recipe as a guide. Dutch like to serve it with extra kejap manis and sambal on the side.

Ingredients

2 tbsp olive oil
leftover pork and or chicken
5 strips bacon
2 tsp sambal
1 tsp shrimp paste (trassi)
2 cloves garlic(minced)
1 tbsp sweet soya sauce
1 leek
1 onion
2 cups shredded cabbage
1 cup of bean sprouts
4 cups Chinese egg noodles, prepared according to package directions

Instructions

Put water in a large pot with plenty of water. When the water starts to boil add the Chinese noodles and cook according package. That should take about 8 minutes.

In the skillet or wok add the olive oil and the cutup left over meat and the bacon. When the bacon is done. Add the minced onion, stir fry for a few minutes. Now it’s time to add the leeks and the bean sprouts and stir fry again for a few minutes.

Add the shredded cabbage, again stir fry for a few minutes. Then add the seasonings; the garlic, shrimp paste, sambal, and sweet soya sauce.

Rinse the noodles with cold water and drain. Combine with the meat vegetable mixture. Serve with atjar tjampoer, a fried egg. If you like you can add sate sticks and kroepoek (shrimp crackers)
